Vegan Treat with Red Lentils and Sweet Potato
Hungarian dish based on stewed peppers and tomatoes. In addition, lentils, mushrooms, zucchini and sweet potatoes … are a real delicacy in the vegetarian cuisine! It will be perfect as a light, nutritious meal – hm, yes, this dish is a solid vitamin bomb. You might be tempted to add a little more chili in cold weather.

Rinse the lentils in the strainer with cold water.

Wash the parsley, dry and chop them.

Peel the onion and cut into medium-sized cubes. Peel the mushrooms and cut them into medium-sized pieces. To peel the mushroom, it is easiest to start by removing the stem, then simply grasp the edge of the skin on the back of the cap and pull to peel the skin off.
Wash the red bell peppers and zucchini, dry and cut them into medium-sized cubes. Peel the sweet potatoes and cut into medium-sized cubes. Wash the chilli pepper and chop into slices.

In a large saucepan, heat 2 tbsp (4 tbsp) of oil and sauté the onion for approx. 2-3 minutes. Then add the raw lentils and cook for about 5 minutes until they turn golden brown.
Add the sweet potatoes and sauté, stirring for 2-3 minutes.

Then add the mushrooms and red bell peppers and cook for 2-3 minutes. Add 1/2 cup (1 cup) of water and mix all ingredients thoroughly. Then add the tomato passata, 1/2 (1) chilli pepper and spices and stew them all together for about 15 minutes. Then add the zucchini and stew for another 7-10 minutes until all the vegetables and lentils are tender.

Put a portion of lentils in a bowl and sprinkle generously with parsley. Use the remaining chopped chilli peppers to decorate the dish. Enjoy your meal!
