Spaghetti bolognese
A classic sauce among pasta sauces. Each Italian mamma has her own unique way of preparing it. Some add red wine, others balsamic vinegar, and others add a pinch of cinnamon. Some will add many different vegetables in the pot with the meat, while others only have carrots with onions and garlic. And you can find various types of meat there as well – from beef to mortadella! There are many variations and inspirations (and stories) for this sauce! In our recipe we use ground beef.

Peel the carrots and grate them on a coarse-mesh grater. Peel the onion and dice it into small cubes. Dice the garlic into small cubes.

In a large frying pan, heat 1 tbsp (2 tbsp) of oil and sauté the onion in the pan for around 3 minutes. Add the grated carrots and fry for about 3 minutes, stirring occasionally.

Then add the minced meat, garlic, chilli, salt and pepper to taste and sauté until the meat is tender (approx. 7 minutes). Pour in the tomato passata, stir, cover with a lid and stew for the 15 minutes. After 15 minutes, add the balsamic vinegar, herbs, some salt and sugar to taste, 1 tbsp of olive oil, stir and stew for another 5 minutes.

In a tall pot, boil 1 litre of water. Add 1 tbsp of salt and 1 tbsp of olive oil. Place the pasta in the boiling water and cook for about 8 minutes. Then strain in a strainer and pour warm water.

Grate the cheese on a fine-mesh grater.

Place the cooked pasta in deep plates. Pour the sauce generously over the pasta and sprinkle with the grated cheese. Buon Appetito!
