Rinse the salad mix in a strainer with cold water.

Thoroughly wash the tomatoes, red bell peppers and zucchini with lukewarm water. Peel the mushrooms and onions. Cut the tomatoes in half. Cut the red peppers into medium-thick strips. Cut the zucchini into thin slices. Cut the mushrooms. Cut the onion into feathers. Cut the halloumi cheese into medium-thick slices.

Heat 1 tbsp of olive oil (or vegetable oil) in a grill (or regular) pan and grill the red peppers (5 minutes on each side), mushrooms (3-4 minutes each side), zucchini (2-3 minutes each side) and the halloumi cheese (2-3 minutes each side).
Put all grilled vegetables one on top of the other in a deep plate so they remain warm.

Cut the lemon in half and squeeze out the juice. Prepare the dressing. Mix 3 tbsp (6 tbsp) of oil, 1 tbsp (2 tbsp) of lemon juice and honey with a pinch of salt and pepper. You can put everything in a tiny jar, screw the cap and shake it vigorously.

On large flat plates, place the salad mix first, then the grilled vegetables with cheese, add fresh tomatoes, onions and olives and drizzle with the dressing. Enjoy your meal!
