Penne Amatriciana

Place the pasta in 1 litre of water and 1 tbsp (flat) of salt, add 1 tbsp of oil and cook the pasta for 10 minutes after boiling the water. Then strain it in a strainer and add warm water (so that the pasta does not lose its temperature).

In the meantime, cut the bacon slices into cubes or strips Peel the onion and dice it. Dice the garlic into small cubes.

Put the bacon on a dry, hot frying pan to melt the fat. Fry it over medium heat for around 3 minutes stirring regularly.
Add the onion, garlic and chilli pepper to the bacon and mix thoroughly.

Add tomato passata, sweet paprika, salt and pepper to taste. Stir and simmer for about 5 minutes.

Meanwhile, grate the cheese on a fine grater.

Put penne pasta on deep plates, then pour spicy bacon and tomato sauce over it and sprinkle with grated Italian cheese, garnish with olives and basil. Buon Appetito!
