Chicken Quesadilla with Homemade Tomato salsa and Cream

Peel the onion and dice it. Wash the bell peppers and dice them. Dice the chicken, put it into a deep plate, add 1 tbsp (2 tbsp) of olive oil and mix the spices thoroughly.

Prepare the salsa: Peel the red onion and cut it into small cubes and divide into two portions. Add 1 tbsp of olive oil and half the diced red onion to the tomato passata, salt and pepper.
Wash the coriander, dry it, chop it and add to the salsa. Stir the sauce thoroughly.

Preheat the oven to 200° C in „upper & lower” heating mode. Line the baking tray with baking paper. Grate the mozzarella cheese. In a frying pan, heat 1 tbsp of olive oil, sauté the diced onion and add the other half of the red onion, add the chicken and fry for 6-7 minutes, until they turn light brown, stirring occasionally.

Place the grated mozzarella cheese on one side of the wheat tortillas, then add the red bell pepper, corn, chicken, another layer of mozzarella, and sprinkle the other half of the tortilla with water around the edges. Close the quesadilla by folding the tortilla in half and pressing it with a spatula to make it stick together nicely. Put in the oven for about 5 minutes.

Take the finished quesadilla out of the oven, cut it into 3 parts on a board, put it on a plate, garnish with salsa and serve while hot. Enjoy your meal!
